Qualia, with its project The Heritage of Taste, will present in Turin, Italy, the theatrical-gastronomic workshop Bite from Within: Designing inclusive culinary experiences using deep historical research and theatrical techniques.

Bite from within is a multisensory experiential workshop exploring new ways to design more inclusive and sustainable culinary experiences. While culinary experiences are probably one of the most popular touristic products, they might be overly simplistic and stereotypical and sustain tourist-centric adaptations of traditional gastronomy, while overlook communities and their cultural culinary practices.

Bite from within, will showcase to its participants how historical research and theatrical techniques can lead to culinary experiences that give voice to the unheard, while offer, apart from a pleasing and satisfying moment, an experiential learning experience. The workshop will highlight the cultural significance behind food, and the ways it can help break down stereotypes and foster a more accurate and respectful appreciation of food systems and communities. Various issues around climate change, interconnectedness of ecosystems, food waste, technological innovations as well as social justice and equity will be sensorily explored. Bite from within will be developed around one of the most iconic traditioanl greek products, Feta Cheese!
